Bellwether Launches Updated Shop Roaster Amid Rising Coffee Costs

With wholesale specialty coffee prices hovering near $15 a pound, Berkeley-based Bellwether Coffee is rolling out a redesigned shop roaster. The hardware launch coincides with internal data suggesting that cafes can slash their coffee expenses by roughly 50 percent by bringing roasting operations in-house rather than purchasing pre-roasted beans.

The company’s analysis of over 1,000 U.S. business entries indicates a median payback period of five months for the investment. Beyond immediate overhead reduction, current users report an average monthly savings of $2,000. For businesses like Mission House Coffee in Lynchburg, Virginia, the shift has resulted in monthly savings exceeding $5,000 while enabling the shop to sell its own branded retail bags.

The new iteration of the Shop Roaster addresses previous installation hurdles by requiring no gas lines, ductwork, or external venting. Designed for high-traffic environments, the electric, smokeless unit features a metal enclosure available in white or bronze. Operators manage the roasting process through a dedicated app that tracks inventory, adjusts roast profiles, and automates green coffee reordering. Bellwether plans to showcase the equipment at Coffee Fest Dallas on October 17, with initial customer shipments scheduled for the first quarter of 2027.
